Sesame Soba Noodles (gluten free, low FODMAP, dairy free)

The recipe is for 3 servings


250 g 100% buckwheat soba noodles

300g chicken breast – thinly sliced against the grain
1 tsp smoked paprika
1 tbsp toasted sesame oil
salt and pepper to taste

1 broccoli – florets only

1/3 cup tamari
2 tbsp rice vinegar
1 tbsp sugar
1 tbsp canola oil
pepper to taste

1 bunch of spring onions (green parts only) – chopped

3 tbsp toasted sesame seeds – white/black


Steam the broccoli for about 2 minutes and set aside.

In a medium bowl mix tamari, vinegar, sugar, canola oil and pepper. Stir until sugar is dissolved. Set aside

Cook the soba noodles according to instructions, about 5 mins. Make sure the noodles don’t clump together. Rinse thoroughly under cold water and set aside. Don’t cook the noodles too far in advance, otherwise they’ll become fragile.

Mix the chicken with spices and sesame oil and sear on a preheated pan until browned. Add the onions, broccoli and sauce and cook for another 2 mins. Add noodles and sesame seeds, mix well and serve immediately.
